Creamy Herb Chicken with Broccoli, Grilled Potatoes & Pasta

Ingredients 

For the Herb Chicken

2 chicken breasts, sliced

1 tbsp olive oil

1 tsp garlic powder

½ tsp dried oregano

½ tsp dried basil

½ tsp paprika

Salt & black pepper

1 tbsp lemon juice

For the Grilled/Roasted Potatoes

2 medium potatoes, sliced or cubed

1 tbsp olive oil

½ tsp paprika

½ tsp dried rosemary

Salt & pepper

For the Creamy Herb Pasta

200g pasta (penne, fusilli, or bowtie)

1 tbsp olive oil

2 garlic cloves, minced

½ cup cream or half-and-half

¼ cup pasta water

¼ cup parmesan

½ tsp dried basil

½ tsp dried oregano

Salt & pepper

For the Broccoli

1 cup broccoli florets

1 tsp olive oil

1 garlic clove, minced

Salt & pepper

Instructions

1. Roast or Grill the Potatoes

Preheat oven to 220°C (425°F).

Toss potatoes with olive oil, paprika, rosemary, salt & pepper.

Roast 20–25 minutes OR grill until crispy and golden.

2. Cook the Chicken

Season chicken with garlic powder, oregano, basil, paprika, salt, pepper, lemon juice.

Heat olive oil in a pan on medium-high.

Cook chicken 5–6 minutes until golden and fully cooked.

Remove and set aside.

3. Cook the Broccoli

In the same pan, add broccoli with a splash of oil.

Add garlic, salt & pepper.

Saute 4–5 minutes until bright and tender.

4. Make the Creamy Herb Pasta

Cook pasta in salted water → reserve ¼ cup pasta water.

In a pan, melt butter.

Add garlic and saute 30 seconds.

Pour in cream + pasta water.

Add basil, oregano, salt & pepper.

Stir and simmer 2 minutes.

Add parmesan.

Toss the pasta in the creamy sauce.

5. Assemble the Plate

Add a generous scoop of creamy herb pasta.

Place tender herb chicken on top.

Add crispy potatoes and garlic broccoli to the sides.

Optional garnish: parsley + extra parmesan.
