Ingredients
1 medium cauliflower, cut into florets
2 tbsp olive oil

2 tbsp fresh parsley or chives, chopped

Instructions
1. Preheat oven:
Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
2. Boil cauliflower:
Bring a large pot of salted water to a boil.
Add cauliflower florets and cook 8–10 minutes until just tender. Drain and let cool slightly.
3. Smash cauliflower:
Place boiled florets on the prepared baking sheet.
Using the bottom of a glass or fork, gently press down each floret to flatten slightly.
4. Season and bake:
Drizzle olive oil over the smashed florets. Sprinkle with salt, pepper, garlic powder, and smoked paprika.
Bake for 20–25 minutes until edges are golden and crispy.
5. Add cheese:
Remove from oven, sprinkle cheese and optional Parmesan on top.
Return to oven for 3–5 minutes, or until cheese melts and bubbles.
