Crispy Baked Chicken Tacos
Crunchy oven-baked tacos stuffed with juicy shredded chicken, spices, and a light cheesy topping.They bake in one sheet pan, become perfectly crispy, and feel indulgent while staying healthy.
Mediterranean flavors come from oregano, garlic, and fresh lime.

Ingredients
Chicken Filling
2 cups cooked shredded chicken
½ cup salsa or chopped tomatoes
½ cup shredded mozzarella or light cheddar
½ small onion, finely chopped
2 garlic cloves, minced
1 tsp dried oregano
½ tsp smoked paprika
½ tsp cumin
½ tsp salt
¼ tsp black pepper
Juice of ½ lime
For assembling
10–12 small corn or whole-wheat tortillas
½ cup shredded mozzarella or mild cheddar
Olive oil spray (or 1–2 tsp olive oil)
Optional toppings
Fresh cilantro
Lemon or lime wedges
Shredded lettuce
Greek yogurt
Chopped tomatoes or olives
Instructions
1. Preheat & prepare tray
Preheat oven to 425°F (220°C).
Line a baking tray and spray lightly with olive oil.
2. Make the chicken filling
In a bowl, mix:
shredded chicken + salsa + onion + garlic + oregano + paprika + cumin + salt + pepper + lime juice + ½ cup cheese.
3. Assemble the tacos
Warm tortillas for 20 seconds to soften.
Add 2–3 tbsp chicken filling into each tortilla.
Fold gently and place on baking tray.
Spray lightly with olive oil to help crisp.
Sprinkle the remaining cheese on top.
4. Bake
Bake for 12–16 minutes, flipping once halfway if needed, until crispy and golden.
5. Serve
Top with cilantro, lime, yogurt, lettuce, or olives.
Serve hot and crunchy!
Tips
Add spinach or shredded zucchini to make them healthier.
Use Greek yogurt as a topping instead of sour cream.
Add chili flakes if you want spice (optional).
