Crispy Baked Feta Rolls with Hot Chili Honey

Golden-crispy phyllo rolls filled with salty feta and fresh herbs, baked (not fried!) until shatteringly crisp, then finished with a glossy drizzle of hot chili honey. Perfect as an appetizer, snack, or party bite.

Ingredients

Feta Rolls

200 g feta cheese, crumbled

1 tbsp cream cheese or Greek yogurt

1 tbsp fresh parsley, finely chopped

1 tsp fresh thyme or oregano

8–10 phyllo pastry sheets

3 tbsp olive oil

Hot Chili Honey

⅓ cup honey

½–1 tsp chili flakes (adjust to taste)

½ tsp apple cider vinegar or lemon juice

Instructions

1️⃣ Prepare Filling

In a bowl, mix feta, cream cheese (if using), parsley, thyme, and black pepper

Taste before adding salt (feta is salty)

2️⃣ Assemble Rolls

Preheat oven to 190°C (375°F)

Place 1 phyllo sheet on a clean surface

Lightly brush with olive oil or butter

Cut sheet in half lengthwise

Spoon feta mixture along one short edge

Fold sides in and roll tightly like a cigar

Repeat with remaining sheets

Place rolls seam-side down on lined baking tray

Brush tops lightly with oil

Warm honey gently in a small pan (do NOT boil)
