This Crispy Tofu Salad is a fresh and satisfying plant-based meal featuring golden crispy tofu, crunchy vegetables, and a flavorful dressing. It’s packed with protein and nutrients, making it perfect for healthy lunches, light dinners, or vegan meal prep.

Ingredients

Tofu

200 g firm tofu, cubed

1 tbsp soy sauce

1 tbsp cornstarch

1 tbsp olive oil or sesame oil

Salad

2 cups mixed salad greens

1 carrot, shredded

1 cucumber, sliced

½ cup cherry tomatoes, halved

2 tbsp green onions, chopped

Dressing

1 tbsp soy sauce

1 tbsp lime juice

1 tsp maple syrup or honey

1 tsp sesame oil

½ tsp grated ginger

Instructions

1️⃣ Prepare the Tofu

Pat tofu dry and cut into cubes. Toss with soy sauce and cornstarch to coat lightly.

2️⃣ Cook the Tofu

Heat oil in a skillet over medium-high heat.
Cook tofu cubes for 6–8 minutes, turning occasionally, until golden and crispy.

3️⃣ Prepare the Salad

In a large bowl combine mixed greens, carrot, cucumber, tomatoes, and green onions.

4️⃣ Make the Dressing

Whisk together soy sauce, lime juice, maple syrup, sesame oil, and ginger.

5️⃣ Assemble the Salad

Add crispy tofu on top of the salad and drizzle with dressing before serving.

Tips

✔ Use an air fryer (200°C / 400°F for 12–15 minutes) for extra crispy tofu.
✔ Add avocado or roasted peanuts for more flavor and texture.
✔ Include quinoa or brown rice to make it a more filling meal.
