Ingredients

1 large cucumber

3–4 oz smoked salmon (or cooked flaked salmon)

3 tbsp cream cheese (or Greek yogurt for lighter option)

1 tsp lemon juice

1 tsp capers (optional)

1 tbsp fresh dill or chives, chopped

Salt & pepper to taste

* Optional: avocado slices, microgreens, or wasabi for a twist

Instructions

1. Prep the Cucumber:

Use a mandoline or vegetable peeler to slice the cucumber lengthwise into thin ribbons.

Pat dry with a paper towel to remove excess moisture.

2. Mix the Filling:

In a bowl, mix cream cheese, lemon juice, herbs, salt, pepper, and capers (if using).

3. Assemble the Rolls:

Lay a cucumber ribbon flat. 

 Spread a small amount of the cream cheese mixture along the length.

Place a strip or flake of salmon and optional additions like avocado or greens.

Roll up tightly and secure with a toothpick if needed.

4. Serve:

Arrange on a platter. Chill for 10 minutes or serve Immediately.

Notes & Tips

Make it dairy-free: Use mashed avocado or a dairy-free cream cheese.

For meal prep: Keep filling and cucumber separate until ready to roll to avoid sogginess.

Flavor boost: Add a tiny dollop of Dijon mustard or horseradish to the filling.
