Greek Chicken Gyro Bowl

This bowl is a deconstructed chicken gyro, layered with tender lemon-oregano chicken, fluffy grains, crisp cucumber-tomato salad, and a big dollop of creamy tzatziki. It’s gluten-free, wholesome, and easy to meal prep!

Ingredients 

For the Greek Chicken:

1½ lbs boneless skinless chicken thighs or breasts

3 tbsp olive oil

Juice of 1 lemon

3 garlic cloves, minced

1½ tsp dried oregano

1 tsp red wine vinegar

Salt & pepper to taste

For the Base:

1½ cups cooked brown rice, white rice, or quinoa

Optional: stir in 1 tsp lemon zest and 1 tbsp chopped parsley

For the Salad:

1 cup cherry tomatoes, halved

1 cup cucumber, diced

¼ cup red onion, thinly sliced

¼ cup Kalamata olives, sliced

2 tbsp olive oil

1 tbsp lemon juice or red wine vinegar

Salt & pepper

For the Tzatziki:

1 cup Greek yogurt (plain, full-fat preferred)

½ cucumber, grated and squeezed dry

1 clove garlic, finely grated

1 tbsp lemon juice

1 tbsp fresh dill or mint, chopped

Salt to taste

Optional Toppings:

Crumbled feta

Extra lemon wedges

Pita chips or warm naan on the side

Instructions

1. Marinate the Chicken

Mix olive oil, lemon juice, garlic, oregano, vinegar, salt, and pepper in a bowl. Add chicken and toss to coat. Marinate in the fridge for at least 30 minutes or overnight for best flavor.

2. Cook the Chicken

Grill or sear the chicken in a skillet over medium-high heat for 5–7 minutes per side, or until cooked through and golden. Let rest, then slice.

3. Make the Tzatziki

In a bowl, combine yogurt, cucumber, garlic, lemon juice, herbs, and salt. Mix well and chill until serving.
