Delicious High Protein Egg White Bites
These fluffy and savory egg white bites are a perfect high-protein, low-calorie snack or breakfast option to fuel your day.
Ingredients:
8 large egg whites
1/4 cup cottage cheese
1/2 cup spinach, chopped
1/4 cup red bell pepper, finely diced
1/4 cup shredded cheddar cheese (optional)
1/4 teaspoon garlic powder
Salt and pepper, to taste
Nonstick cooking spray
Directions:
Preheat the oven to 350°F (175°C) and lightly spray a muffin tin with nonstick cooking spray.
In a blender, combine the egg whites, cottage cheese, garlic powder, salt, and pepper. Blend until smooth and frothy.
Pour the egg white mixture evenly into the muffin cups, filling each about 2/3 full.
Sprinkle the chopped spinach, diced red bell pepper, and shredded cheddar cheese (if using) evenly into each cup.
Bake for 18-20 minutes or until the egg bites are set and slightly golden on the edges.
Remove the muffin tin from the oven and let the egg bites cool for a few minutes before gently removing them.
Serve warm, or store in an airtight container in the fridge for up to 4 days. Reheat before serving.
