Easy Fattoush Salad is a refreshing Middle Eastern salad known for its crisp vegetables and crunchy toasted pita. Fresh Tomato, Cucumber, and herbs are tossed with crispy Pita pieces and a tangy lemon–olive oil dressing.Traditionally seasoned with Sumac, this salad has a bright, slightly tangy flavor and is a staple in Lebanon and throughout the Middle East.

Ingredients

For the Salad

2 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 cucumber, diced

4 radishes, thinly sliced

¼ red onion, thinly sliced

2 tbsp chopped parsley

2 tbsp chopped mint

For the Crispy Pita

1 large pita bread, cut into small pieces

1 tbsp olive oil

Pinch of salt

For the Dressing

3 tbsp olive oil

2 tbsp fresh lemon juice

1 tsp sumac

½ tsp pomegranate molasses

½ tsp salt

¼ tsp black pepper

Instructions

1. Prepare the Pita Chips

Preheat a pan or oven. Toss the pita pieces with olive oil and a pinch of salt.

Bake at 190°C (375°F) for 5–7 minutes or toast in a pan until golden and crispy.

2. Prepare the Vegetables

In a large bowl combine:

chopped lettuce

tomatoes

cucumber

radishes

red onion

parsley

mint

3. Make the Dressing

In a small bowl whisk together:

olive oil

lemon juice

sumac

pomegranate molasses

salt and pepper

4. Assemble the Salad

Pour the dressing over the vegetables and toss well.

Add the crispy pita pieces just before serving.

5. Serve

Serve immediately so the pita stays crunchy.
