Place about 1 teaspoon of filling in the center of each wrapper.
Wet the edges with water using your finger.
Fold into a triangle (or bring all 4 corners up for a “purse” shape), sealing tightly to avoid leaks.
Fry
Heat oil in a deep pan or fryer to 350°F (175°C).
Fry rangoons in batches for 2–3 minutes until golden brown and crispy.
Remove and drain on paper towels.
Serve
Serve hot with sweet chili sauce, soy sauce, or duck sauce.
Tips:
Use pre-cooked shrimp to save time.
Bake instead of frying: 400°F (200°C) for 12–15 minutes, brushed with oil.
Make ahead: Freeze before frying, then cook from frozen (just add a minute or two)
