Ingredients:

  1. 1 sheet Puff Pastry, thawed
  2. 2 large Yellow Onions, thinly sliced
  3. 2 tbsp Butter
  4. 1 tbsp Olive Oil
  5. 1/2 tsp Salt
  6. 1/4 tsp Black Pepper
  7. 1/2 tsp Sugar
  8. 1/4 cup Beef or Vegetable Broth
  9. 1 cup Gruyère Cheese, shredded
  10. 1/4 cup Parmesan Cheese, grated
  11. 1 Egg, beaten (for egg wash)
  12. Fresh Thyme or Parsley for garnish (optional)

 

Method:

  1. Set your air fryer to 375°F (190°C). In a large skillet, melt the butter with the olive oil over medium heat.
  2.  Add the sliced onions and cook, stirring occasionally, until caramelised and golden brown, about 20 to 25 minutes.
  3. Stir in the sugar, salt, and pepper.
  4. Next, add the beef or vegetable broth, scraping the skillet to deglaze any browned bits.
  5. Cook for an additional 5 minutes, or until the liquid is absorbed. Remove from the heat and allow to cool slightly.
  6. Roll out your puff pastry sheet on a lightly floured surface.
  7. Cut your puff pastry into squares or rectangles, each measuring 2-3 inches wide.
  8. Put a small amount of the caramelised onion mixture in the middle of each square of puff pastry. Add grated Parmesan and shredded Gruyère cheese on top.
  9. Depending on the shape you like, fold the puff pastry over the filling to form triangles or rectangles. To seal, firmly press the edges together.
  10. Apply beaten egg wash to the cheese puffs’ tops.
  11. To allow for air circulation, place the cheese puffs in the air fryer basket, leaving a little space between each one.
  12. The cheese puffs should be air-fried for 8 to 10 minutes at 375°F (190°C), or until they are puffy and golden brown.
  13. Before serving, remove from the air fryer and allow it cool slightly. If desired, garnish with parsley or fresh thyme.
  14. Warm up for a delicious snack or appetiser.
