⏱ Time

Prep: 10 minutes

Cook: 15 minutes

Total: 25 minutes

Ingredients

2 cups cauliflower rice (store-bought or homemade by pulsing cauliflower florets in a food processor)

1 small head broccoli, cut into small florets

1 small carrot, finely diced (optional, for color & sweetness)

2 cloves garlic, minced

1 tbsp olive oil (or sesame oil for an Asian flavor)

2 eggs (fried sunny-side up or over easy)

2 tbsp low-sodium soy sauce (or tamari for gluten-free; optional Mediterranean twist: use a splash of lemon + herbs instead)

Salt & black pepper, to taste

Fresh herbs: parsley, coriander, or spring onions for garnish

‍ Instructions

1. Prepare vegetables

Steam or blanch broccoli florets for 2–3 minutes until just tender. Set aside.

2. Cook the cauliflower rice

Heat olive oil in a large pan or wok.

Add garlic and carrot, sauté 2 minutes.

Stir in cauliflower rice and cook for 5–6 minutes, stirring often, until tender but not mushy.

Add soy sauce (or lemon + herbs), salt, and pepper.

3. Combine

Add broccoli to the pan and toss everything together.

4. Fry the eggs

In a separate small pan, fry eggs in a little oil until whites are set but yolks still runny (or to your preference).

5. Serve

Divide cauliflower rice mixture into bowls, top each with a fried egg, and garnish with fresh herbs.

Notes & Tips

For extra protein, add chickpeas, tofu, or grilled chicken.

For crunch, sprinkle toasted almonds or sesame seeds on top.

To keep it Mediterranean, season with oregano, dill, or parsley instead of soy sauce.
