  1. 5 cups (about 1-1/4 pounds) of small pattypan squash, cut in half.
  2. One tablespoon of olive oil
  3. Two minced cloves of garlic
  4. Half a teaspoon of salt
  5. 1/4 teaspoon of oregano, dried
  6. 1/4 teaspoon of thyme, dried
  7. 1/4 tsp pepper
  8. One tablespoon of freshly chopped parsley

Instructions for Garlic Herb Fried Patty Pan Squash

  • Turn the air fryer on to 375°F. Put the squash into a big bowl. Drizzle squash with a mixture of oil, garlic, salt, oregano, thyme, and pepper. Toss in the coat. Put the squash in the air fryer basket on an oiled tray. Simmer for 10 to 15 minutes, stirring periodically, or until soft. Add a little parsley on top.
