3 medium potatoes, peeled and diced

1½ tbsp olive oil

2 cloves garlic, minced

1 bunch asparagus, trimmed (about 300g)

1 tbsp olive oil

2 cloves garlic, minced

¼ cup heavy cream or milk

¼ cup grated Parmesan cheese

¼ cup mozzarella cheese

Salt & pepper, to taste

 Instructions

Step 1: Make the Garlic Potatoes

Preheat oven to 200°C (400°F).

Toss diced potatoes with olive oil, garlic, rosemary, salt, and pepper.

Spread on a baking tray and roast for 25–30 minutes, stirring halfway through, until golden and crisp.

Step 2: Cook the Glazed Salmon

In a bowl, whisk soy sauce, honey, lemon juice, mustard, garlic, and a pinch of pepper.

Heat olive oil in a skillet over medium heat.

Add salmon fillets (skin-side down if using) and sear for 3–4 minutes per side until golden.

Pour glaze mixture into the pan and cook another 2–3 minutes, spooning sauce over salmon as it thickens and caramelizes.

Turn off heat and let salmon rest in the glaze for 1–2 minutes before serving.

Step 3: Make the Cheesy Asparagus

Heat olive oil and butter in a skillet over medium heat.
