Golden gluten-free pastry bites with a light crunch on the outside and a soft, savory center. These are baked (not fried), customizable, and taste amazing even without wheat.

Ingredients
Pastry
1 cup gluten-free all-purpose flour
¼ tsp salt
½ tsp baking powder
¼ cup cold butter or dairy-free butter, cubed
¼ cup Greek yogurt or plant-based yogurt
1–2 tbsp cold water
Filling
Savory Option
½ cup crumbled feta or mozzarella
1 tbsp chopped parsley or spinach
Black pepper
Sweet Option
¼ cup dark chocolate chips or chopped nuts
1 tbsp honey or maple syrup

1 egg (or milk/plant milk)
Instructions
1️⃣ Make Dough
In a bowl, mix gluten-free flour, salt, baking powder
Rub in cold butter until crumbly
Mix in yogurt, add water gradually to form soft dough
Chill 10 minutes
2️⃣ Shape Bites
Preheat oven to 180°C (350°F)
Roll dough between parchment paper
Cut into small squares or circles
Add filling in center, fold and seal edges
3️⃣ Bake
Place on lined tray
Brush with egg or milk
Bake 18–22 minutes until golden

Keep dough slightly cold for best texture
Add sesame or nigella seeds on top
Air-fryer: 180°C for 10–12 minutes
