Greek Chicken Gyros with Tzatziki Sauce and Greek Salad
Ingredients:
Chicken Marinade:
  1. 2 lbs. Chicken Breast, cut into pieces
  2. 1/4 cup Greek Yogurt
  3. 3 Tablespoons Fresh Lemon Juice
  4. 2 Tablespoons Extra Virgin Olive Oil
  5. 1 Tablespoon Red Wine Vinegar
  6. 1 1/2 teaspoon Salt
  7. 1 teaspoon Pepper
  8. 2 teaspoons Oregano
  9. Tzatziki Sauce:
  10. 1 1/2 cups Greek Yogurt
  11. 2 Tablespoons Extra Virgin Olive Oil
  12. 1 Tablespoon Lemon Juice
  13. 1 Tablespoon Red Wine Vinegar
  14. 1-2 teaspoons Salt
  15. 1 Tablespoon Fresh Dill, diced
  16. 3 Garlic Cloves, finely diced
  17. 1 Cucumber, grated and squeezed to drain
Greek Salad:
  1. 3 Tomatoes, diced
  2. 2 Cucumbers, peeled and diced
  3. 1/4 Red Onion, diced
  4. 2 Tablespoons Fresh Italian Parsley, diced
  5. 1 Tablespoon Extra Virgin Olive Oil
  6. Salt and Pepper, to taste
  7. Feta Cheese
  8. Pita Bread:
  9. 4-6 Greek Pita Breads, Naan bread, or Flatbread
Directions:
Marinate the Chicken:
  1. Place chicken, yogurt, lemon juice, olive oil, vinegar, salt, pepper, and oregano in a bag and let marinate for at least 30 minutes, preferably 2-4 hours. The ideal time is 24 hours.
Prepare the Tzatziki Sauce:
  1. Stir together yogurt, olive oil, lemon juice, vinegar, salt, dill, and garlic. Stir in grated cucumber after squeezing to remove excess water. Adjust seasonings to taste.
Make the Greek Salad:
Place tomatoes, cucumbers, red onion, parsley, olive oil, salt, and pepper in a bowl. Stir to coat and adjust seasoning to taste. Add feta cheese.
Cook the Chicken:
To grill: Thread chicken onto skewers and heat grill to medium. Cook for 5-7 minutes per side or until fully cooked.
To use a skillet: Heat skillet to medium-high and add oil. Cook chicken for 8-10 minutes or until fully cooked and golden brown.
Assemble the Gyros:
Place chicken in warmed pita bread. Top with tzatziki sauce and Greek salad. Add additional feta, if desired.
