Ingredients
For the Chicken
4 boneless, skinless chicken breasts (or thighs)
3 tbsp extra-virgin olive oil
Juice and zest of 1 lemon
4 garlic cloves, minced
1½ tsp dried oregano
½ tsp paprika (sweet, optional)
Salt & black pepper, to taste
For the Broccoli
4 cups broccoli florets
2 tbsp olive oil
2 garlic cloves, sliced
Salt & black pepper, to taste
For Finishing
⅓ cup crumbled feta cheese
2 tbsp fresh parsley or dill, chopped
Lemon wedges, for serving
Instructions
1. Preheat & marinate
Preheat oven to 220°C (425°F).
In a bowl, mix olive oil, lemon juice & zest, garlic, oregano, paprika, salt, and pepper.
Coat chicken well and let marinate 10 minutes (or up to 24 hours refrigerated).
2. Arrange the pan
Place marinated chicken in the center of a large baking sheet or roasting pan.
In a separate bowl, toss broccoli with olive oil, sliced garlic, salt, and pepper.
Arrange broccoli around the chicken in an even layer.
3. Roast
Roast uncovered for 25–30 minutes, flipping chicken once halfway, until:
Chicken reaches 74°C (165°F) internal temp
Broccoli is tender and lightly charred
(Optional: Broil 2–3 minutes at the end for extra color.)
4. Finish & serve
Remove from oven. Sprinkle with feta and fresh herbs.
