Greek-Style Tomato & Feta Fritters with Garlic Thyme Sauce

These crispy-on-the-outside, tender-on-the-inside fritters are packed with juicy tomatoes, crumbled feta, fresh herbs, and a hint of oregano. Served with a smooth garlic-thyme yogurt sauce, they make a perfect appetizer, snack, or light vegetarian meal.

Ingredients

For the Fritters

2 cups (300 g) ripe tomatoes, finely diced

1 tsp salt (for draining tomatoes)

½ cup (75 g) crumbled feta cheese

½ small red onion, finely chopped

2 tbsp fresh parsley, chopped

2 tbsp fresh mint, chopped (or extra parsley)

1 tsp dried oregano

½ tsp black pepper

1 cup (120 g) all-purpose flour

½ tsp baking powder

1 egg, lightly beaten

Olive oil, for shallow frying

For the Garlic Thyme Sauce

1 cup (250 g) Greek yogurt

1 clove garlic, minced or grated

1 tsp fresh thyme leaves (or ½ tsp dried)

1 tbsp lemon juice

Salt & pepper to taste

Instructions

1. Prepare Tomatoes

1. Dice tomatoes and place in a bowl with 1 tsp salt.

2. Let sit for 10 minutes to draw out moisture.

3. Drain well, pressing gently to remove excess liquid.

2. Make the Fritter Batter

1. In a large bowl, combine drained tomatoes, feta, onion, parsley, mint, oregano, and black pepper.

2. In a separate small bowl, whisk flour with baking powder, then add to the tomato mixture.

3. Stir in the beaten egg until combined. The mixture should be thick — if too wet, add a little extra flour.

3. Prepare the Sauce

1. In a small bowl, combine Greek yogurt, garlic, thyme, lemon juice, salt, and pepper.

2. Mix well and chill until ready to serve.

4. Cook the Fritters

1. Heat about ½ inch (1 cm) of olive oil in a large skillet over medium heat.

2. Drop heaping tablespoons of batter into the oil, flattening slightly.

3. Fry for 2–3 minutes per side until golden brown.

4. Transfer to paper towels to drain excess oil.

5. Serve

Serve warm fritters with chilled garlic thyme sauce for dipping.

Tips

For extra crunch, add a spoonful of fine breadcrumbs to the batter.

If using very juicy tomatoes, pat them dry with paper towels before mixing.

These can be baked (200°C / 400°F for 15–18 minutes) but frying gives a better texture.
