Greek Yogurt Marinated Chicken Wrap
Ingredients
For the Marinade:
1 cup Greek yogurt (plain, full-fat or low-fat)
2 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp ground cumin (optional)
½ tsp smoked paprika
Salt & black pepper to taste
1 lb (450g) boneless, skinless chicken breasts or thighs (sliced or whole)
For the Wrap:
Tortilla wraps or pita bread
Lettuce or spinach
Sliced tomatoes
Cucumber slices
Red onion, thinly sliced
Crumbled feta cheese (optional)
Tzatziki sauce or extra Greek yogurt
Instructions
Marinate the Chicken
In a bowl, mix all marinade ingredients.
Add chicken and coat well.
Cover and marinate for at least 30 minutes (or overnight in the fridge for best flavor).
Cook the Chicken
Grill or pan-fry chicken over medium-high heat until cooked through (internal temp: 165°F/74°C).
Let rest for a few minutes, then slice if using whole pieces.
Assemble the Wrap
Warm the tortillas or pita if desired.
Add a layer of lettuce or spinach, followed by the sliced chicken.
Top with tomatoes, cucumber, red onion, and feta.
Dizzle with tzatziki or extra Greek yogurt.
Wrap and Serve
Fold tightly and enjoy warm or chilled.
