Chicken
4 boneless, skinless chicken breasts (or thighs)
2 tbsp olive oil
1 ½ tbsp Cajun seasoning (store-bought or homemade)
Juice of ½ lemon
Salt & pepper, to taste

1 zucchini, sliced lengthwise
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 red onion, sliced into wedges
1 tbsp olive oil
Salt & black pepper, to taste
Zesty Coriander Dressing
1 cup fresh coriander (cilantro), loosely packed
3 tbsp olive oil
2 tbsp lime juice
1 small green chilli
1 clove garlic
½ tsp honey
Salt, to taste
Instructions
1. Prep the chicken
Rub chicken with olive oil, Cajun seasoning, lemon juice, salt, and pepper.
Let marinate at least 15 minutes (or up to 2 hours).
2. Make coriander dressing
Blend coriander, olive oil, lime juice, chilli, garlic, honey, and salt until smooth. Adjust acidity to taste.
3. Cook chicken
Heat a griddle pan (or cast-iron skillet) over medium-high heat.
Cook chicken 5–6 minutes per side until charred and cooked through (165°F / 74°C). Rest 5 minutes before slicing.
4. Char the veggies
Toss zucchini, peppers, and onion with olive oil, salt, and pepper.
Griddle until tender and slightly charred (about 6–8 minutes).
5. Assemble & serve
Slice chicken and arrange with charred veggies.
Drizzle generously with coriander dressing.
Serve with couscous, rice, or warm flatbreads.
