2 boneless skinless chicken breasts

1 tbsp olive oil

1 tsp lemon juice

1 garlic clove, minced

½ tsp paprika

½ tsp dried oregano

Salt & black pepper to taste

For the guacamole:

1 ripe avocado

½ small red onion, finely chopped

½ tomato, finely chopped

½ lime, juiced

1 tbsp fresh cilantro or parsley, chopped

Salt to taste

For the salad bowl:

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup corn kernels

2 cups mixed greens (arugula, lettuce, or spinach)

1 tbsp olive oil

½ lemon

 Instructions

Marinate & Grill the Chicken:

Mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper in a small bowl.

Rub the mixture onto chicken breasts.

Grill over medium heat for 6–7 minutes per side until cooked through (internal temp 74°C/165°F).

Let rest for 5 minutes, then slice.

Prepare Guacamole:

Mash the avocado in a bowl.

Stir in onion, tomato, lime juice, cilantro, and salt.

Mix until creamy but slightly chunky.

Assemble Salad Bowls:

In serving bowls, add a base of mixed greens.

Top with sliced grilled chicken, cherry tomatoes, cucumber, and corn.
