Ingredients

For the Grilled Herb Chicken

1–1.25 lbs boneless skinless chicken breasts or thighs

2 tbsp olive oil

1 tbsp lemon juice

3 cloves garlic, minced

1 tbsp fresh basil, chopped

1 tsp dried oregano

½ tsp thyme

½ tsp salt

¼ tsp black pepper

2 cups cooked quinoa

Instructions

1. Marinate the Chicken

In a bowl, mix olive oil, lemon juice, garlic, parsley, basil, oregano, thyme, salt, and pepper.

Add chicken and coat well.

Marinate 15 minutes–4 hours.

2. Grill the Chicken

Outdoor grill or grill pan:

Heat to medium-high.
