Grilled Herb Chicken with Asparagus, Rice & Tomato Salsa

A light, vibrant, Mediterranean-inspired meal featuring juicy herb-marinated grilled chicken, garlicky asparagus, fluffy rice, and a refreshing tomato salsa. Perfect for a healthy lunch or dinner!

Ingredients 

Herb Grilled Chicken

2 chicken breasts or thighs

1 tbsp olive oil

2 garlic cloves, minced

1 tsp dried or fresh thyme

1 tsp dried or fresh oregano

½ tsp paprika

½ tsp black pepper

½ tsp salt

1 tbsp lemon juice

Optional: 1 tbsp Greek yogurt

Garlic Asparagus

1 bunch asparagus, trimmed

1 tsp olive oil

1 garlic clove, minced

Salt & pepper

Fluffy Rice

1 cup rice (basmati or jasmine)

2 cups water or broth

Salt

Fresh Tomato Salsa

1 cup cherry tomatoes, chopped

2 tbsp red onion, finely diced

1 tbsp olive oil

1 tbsp lemon juice

1 tbsp fresh parsley or cilantro, chopped

Salt & pepper

Instructions

1. Prepare the Chicken

Mix olive oil, garlic, thyme, oregano, paprika, lemon juice, salt, and pepper.

Rub the mixture onto the chicken.

Marinate 10–20 minutes (longer is even better).

Grill or pan-sear:

Cook 5–6 minutes per side until golden and cooked through.

2. Cook the Rice

Rinse rice until water runs clear.

Combine rice, water/broth, and salt in a pot.

Cover and simmer 12–15 minutes.

Fluff with a fork.

3. Cook the Asparagus

Heat a pan with a little oil.

Add asparagus + garlic + salt + pepper.

Saute 4–5 minutes until bright green and tender.

4. Make the Tomato Salsa

Combine tomatoes, onion, parsley/cilantro, oil, lemon juice, salt, and pepper.

Toss and let sit 5 minutes for flavor to develop.

5. Assemble the Plate

Add a scoop of rice.

Top with grilled herb chicken.

Add garlic asparagus.

Spoon on a generous amount of fresh tomato salsa.

Optional: drizzle a little lemon or herb olive oil over the chicken.

Tips

Swap rice with quinoa or couscous for variety.

Add avocado slices for creaminess.

Add feta to the tomato salsa for a Greek twist.

For extra flavor, grill the asparagus too.
