Ingredients
For the Chicken
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp honey
1 tsp lemon juice
¼ tsp garlic powder
Salt & black pepper, to taste
For the Salad
4 cups chopped romaine or mixed greens
½ cup cherry tomatoes, halved
½ avocado, sliced
2 boiled eggs, halved
¼ cup shredded cheddar, feta, or goat cheese
2 strips cooked bacon, chopped
¼ cup corn kernels or cucumber, diced
1 tbsp chopped fresh parsley or chives
For the Honey Mustard Dressing
3 tbsp Greek yogurt or mayonnaise
1 tbsp Dijon mustard
1½ tbsp honey
1 tbsp apple cider vinegar or lemon juice
1 tbsp olive oil
Salt & pepper, to taste
Instructions
Cook the Chicken
Whisk olive oil, Dijon mustard, honey, lemon juice, garlic powder, salt, and pepper.
Coat chicken and marinate 15 minutes.
Grill or pan-sear over medium heat for 6–7 minutes per side until cooked through.
Rest 5 minutes, then slice thinly.
Prepare the Dressing
Combine Greek yogurt (or mayo), Dijon mustard, honey, vinegar, olive oil, salt, and pepper.
Whisk until smooth. Add water if needed to adjust consistency.
Assemble the Salad
Arrange greens in a large bowl or platter.
Add sliced chicken, cherry tomatoes, avocado, boiled eggs, cheese, corn, and bacon (if using).
Sprinkle with fresh parsley or chives.
Dress & Serve
