2 tbsp olive oil

3 cloves garlic, minced

1 tsp lemon juice

Cover and marinate at least 30 minutes (up to overnight for best flavor).

Assemble skewers

Thread marinated chicken onto skewers (if wooden, soak in water 20 min before).

Oven method: Preheat oven to 200°C (400°F). Place skewers on a lined baking sheet. Bake 18–20 minutes, flipping halfway. For extra crispiness, broil 2 minutes at the end.

Serve

Sprinkle with fresh parsley and extra Parmesan.

Serve hot with lemon wedges and ranch dip.

Notes & Tips

Use chicken thighs for juicier skewers.

Add vegetables (zucchini, bell peppers, onions) between chicken pieces for extra flavor.

For extra cheesy flavor, brush skewers with more Parmesan-ranch mix halfway through cooking.
