2 cups low-sodium chicken or vegetable broth

1 tbsp olive oil

2 tbsp chopped fresh parsley

1 tbsp chopped fresh dill

Instructions

Step 1: Prepare the Chicken

In a bowl, mix olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper.

Add chicken breasts and coat well. Marinate for 10–15 minutes (or longer if time allows).

Step 2: Cook the Rice

Heat olive oil or butter in a saucepan over medium heat.

Add rice and toast lightly for 1–2 minutes.

Pour in broth, season with salt and pepper, and bring to a boil.

Reduce heat to low, cover, and simmer 15–18 minutes until rice is tender and liquid is absorbed.

Fluff with a fork and stir in fresh herbs.

Step 3: Cook the Chicken

Heat a skillet over medium-high heat.

Add marinated chicken and cook 5–6 minutes per side, until golden brown and fully cooked (internal temperature 75°C / 165°F).

Remove from heat and let rest for 3 minutes, then slice.
