Lemon Garlic Butter Chicken and Green Beans
Ingredients:
For the Lemon Garlic Butter Chicken:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Zest and juice of 1 lemon
- 3 tablespoons Olive butter
- Fresh parsley, chopped for garnish
For the Green Beans:
- 1 lb (450g) fresh green beans, trimmed
- Salt, to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1/2 lemon
- Salt and pepper, to taste
Instructions:
Prepare the Chicken:
1. Season the chicken breasts with salt and pepper on both sides.
2. In a large skillet, heat olive oil over medium-high heat.
3. Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes
on each side, or until they are golden brown and cooked through. Remove the
chicken from the skillet and set aside.
Make the Lemon Garlic Butter Sauce:
1. In the same skillet, add minced garlic, dried oregano, dried thyme, and paprika.
Sauté for about 1 minute, until fragrant.
2. Add lemon zest and juice to the skillet, stirring to combine.
3. Reduce the heat to low and add the butter to the skillet, stirring until melted
and incorporated into the sauce.
4. Return the cooked chicken breasts to the skillet, spooning the lemon garlic
butter sauce over them. Cook for an additional 2-3 minutes to allow the flavors
to meld together.
Prepare the Green Beans:
1. While the chicken is cooking, bring a pot of salted water to a boil. Add the
trimmed green beans and cook for about 3-4 minutes, or until they are crisp-
tender. Drain the green beans and set aside.
2. In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
3. Add the blanched green beans to chicken.
4. Combine and serve: Serve chicken with roasted green beans and spoon some of the lemon garlic butter sauce over the top.
