INGREDIENTS:
- 2 tablespoon olive oil
- 1 onion chopped
- 6 garlic cloves minced
- 2 carrots diced
- 1 red bell pepper diced
- 2 yellow potatoes cubed
- 2 cups green lentils
- 3 tablespoon tomato paste
- 1 teaspoon turmeric
- ½ teaspoon paprika
- 1 teaspoon cumin
- 6 cups vegetable stock
- 1 tsp salt
- 3 cups baby spinach
- 1 cup parsley chopped
INSTRUCTIONS:
- In a large pot, heat the olive oil over medium heat. Saute the onion till golden brown.
