Ingredients
Chicken Fajita
2 boneless skinless chicken breasts, sliced
1 tbsp olive oil
1 tsp chili powder
½ tsp paprika
½ tsp garlic powder
½ tsp cumin
½ tsp salt
¼ tsp black pepper
Bowl Base
2 cups cooked rice (white, brown, or cilantro-lime rice)
1 cup black beans, drained
1 cup corn kernels
Vegetables
1 red bell pepper, sliced
1 green bell pepper, sliced
½ onion, sliced
Toppings
1 avocado, sliced
½ cup cherry tomatoes, halved
¼ cup shredded cheese
2 tbsp fresh cilantro, chopped

Instructions
1️⃣ Season the Chicken
In a bowl mix chicken slices with olive oil, chili powder, paprika, garlic powder, cumin, salt, and pepper.
2️⃣ Cook the Chicken
Heat a skillet over medium-high heat.
Cook the chicken for 6–8 minutes until browned and cooked through.
3️⃣ Saute the Vegetables
In the same pan cook sliced peppers and onion for 4–5 minutes until slightly tender.
4️⃣ Assemble the Bowl
Divide rice among bowls.
Top with chicken, sautéed peppers, black beans, and corn.
5️⃣ Add Toppings
Add avocado slices, tomatoes, shredded cheese, cilantro, and a squeeze of lime.
