Ingredients
Salad Base:
1 large ripe mango, peeled and sliced into thin wedges
1 ball fresh burrata (about 100–125g), chilled
1 cup cherry tomatoes, halved (optional but great for color)
1 cup arugula or baby greens
½ small red onion, very thinly sliced
Fresh basil and/or mint leaves (a handful)
Flaky sea salt & cracked black pepper
Citrus Honey Vinaigrette:
2 tbsp extra virgin olive oil
1 tbsp fresh lime juice (or lemon juice)
1 tsp honey (or maple syrup)
1 tsp white balsamic vinegar or apple cider vinegar
Pinch of salt
Optional: ¼ tsp finely grated lime zest for extra brightness
Instructions
Make the Vinaigrette
In a small jar or bowl, whisk or shake together olive oil, lime juice, honey, vinegar, salt, and zest until smooth and emulsified.
Assemble the Salad Base
On a wide plate or shallow bowl, arrange arugula or greens. Layer mango slices, halved tomatoes, and onion. Tuck in torn basil and/or mint.
Add the Burrata
Gently place the whole burrata in the center. Tear it open slightly to let the creamy center ooze.
Dress & Finish
Drizzle the vinaigrette over everything. Finish with flaky sea salt and black pepper to taste.
Serve
Serve immediately with grilled sourdough, crostini, or as is. Great as a starter or light lunch!
