Main Dish
500 g boneless chicken breast or thighs, cut into chunks
2 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup orzo pasta
2½ cups warm chicken stock
½ cup milk (or light cream)
½ cup grated mozzarella
¼ cup grated Parmesan
½ tsp dried oregano
Salt & black pepper
Veggies (Kid-Friendly)
½ cup frozen peas
½ cup corn kernels
Finish
Fresh parsley, chopped
Extra olive oil
👩🍳 Instructions
Step 1: Start the Base
1. Preheat oven to 190°C (375°F).
2. Heat olive oil in an oven-safe pan.
3. Cook onion until soft (4–5 minutes).
4. Add garlic and oregano, stir briefly.
Step 2: Build the Bake
1. Add chicken pieces, season lightly with salt & pepper.
2. Stir in orzo.
3. Pour in chicken stock and milk.
4. Add peas and corn.
5. Mix gently and bring to a light simmer.
Step 3: Bake
1. Sprinkle mozzarella and Parmesan on top.
2. Cover with foil and bake for 30 minutes.
3. Uncover and bake 10–15 minutes until golden and creamy.
