Mediterranean 5-Minute Easy Stuffed Zucchini Boats

🧺 Ingredients
2 medium zucchini
1 medium tomato (chopped)
¼ cup mozzarella or feta cheese (crumbled)
1 tbsp olive oil
Salt to taste
Black pepper to taste
½ tsp dried oregano or Italian herbs

1. Prep zucchini:
Cut zucchini lengthwise.
Scoop out a little center to make boats.
2. Heat pan:
Add olive oil to a non-stick pan on medium heat.
3. Fill boats:
Add chopped tomatoes inside zucchini.
Sprinkle salt, pepper, oregano, and cheese.
4. Cook:
Place boats in pan, cover with lid.
