400 g (1 can) crushed tomatoes (or 3 fresh tomatoes, grated)
1 cup vegetable broth (or water)
1 tsp sea salt (to taste)
½ tsp black pepper
½ tsp oregano (optional)
A pinch of chili flakes (optional, if you like a little heat)
1 small bunch fresh basil leaves, torn
Instructions
1. Sauté base
Heat olive oil in a large pot over medium heat.
Add onion and cook until soft and golden (about 5–6 min).
Stir in garlic for 1 min until fragrant.
2. Add vegetables
Add potatoes and green beans. Stir well to coat in the oil and aromatics.
3. Simmer with tomatoes
Pour in the crushed tomatoes and broth.

Bring to a boil, then reduce heat to low.
