Ingredients:

4 cups chopped romaine lettuce (or a mix with arugula or spinach)

½ cup cherry tomatoes, halved

¼ cup cucumber, sliced

¼ cup Kalamata olives, pitted and halved

2–3 tbsp sun-dried tomatoes, chopped

¼ cup crumbled feta cheese

¼ small red onion, thinly sliced (optional)

½ cup homemade or store-bought croutons

Optional: grilled chicken or chickpeas for added protein

¼ cup plain Greek yogurt

2 tbsp extra virgin olive oil
