Golden, crisp rolls filled with creamy mashed potatoes, sweet sautéed carrots, and tender cabbage — seasoned with Mediterranean herbs, olive oil, and garlic. These savory rolls are perfect as a main dish, side, or appetizer, and pair beautifully with a yogurt herb dip or tomato sauce.

Ingredients

For the Filling

3 medium potatoes, peeled and cut into chunks

1½ tbsp olive oil

1 small onion, finely chopped

1 cup carrots, grated or finely chopped

1½ cups cabbage, finely shredded

2 cloves garlic, minced

1 tsp dried oregano

½ tsp dried thyme or basil

Salt and pepper, to taste

2 tbsp feta cheese (optional, for creaminess)

1 tbsp lemon juice

For the Rolls

8 sheets phyllo pastry or whole wheat tortillas

2 tbsp olive oil or melted butter (for brushing)

Optional Yogurt Dip

½ cup Greek yogurt

1 tsp lemon juice

½ tsp olive oil

1 tsp chopped dill or mint

Salt and pepper, to taste

 Instructions

Step 1: Make the Mashed Potatoes

1. Boil potatoes in salted water until tender (about 12–15 minutes).

2. Drain and mash until smooth.

3. Set aside.

Step 2: Cook the Vegetables

1. Heat olive oil in a skillet over medium heat.

2. Add onion and saute for 2–3 minutes until translucent.

3. Add garlic, carrots, and cabbage; cook for 6–8 minutes until soft and slightly caramelized.

4. Stir in oregano, thyme, salt, and pepper.

5. Add the cooked vegetables into the mashed potatoes. Mix in feta (if using) and lemon juice.

6. Taste and adjust seasoning.

Step 3: Assemble the Rolls

If using phyllo pastry:

1. Preheat oven to 375°F (190°C).

2. Brush one sheet of phyllo with olive oil, layer another on top, and brush again.

3. Place 2–3 tbsp of the filling near one end and roll up, folding sides inward.

4. Repeat with remaining filling and sheets.

5. Arrange rolls on a parchment-lined baking tray and brush tops with olive oil.

If using tortillas:

Fill and roll like burritos, then bake or pan-sear until golden.

Step 4: Bake

Bake for 20–25 minutes, or until golden brown and crisp.

Cool slightly before serving.

Step 5: Serve

Serve warm with the yogurt herb dip or a roasted tomato sauce on the side.

 Notes & Tips

Add a handful of spinach, peas, or zucchini for more vegetables.

Sprinkle a bit of sesame or nigella seeds on top for extra crunch.

You can make these ahead and reheat in the oven for 10 minutes before serving.
