📝 Ingredients

For the Dough

2 ½ cups all-purpose flour

1 cup warm water (not hot)

2 tbsp olive oil

1 tbsp sugar or honey

1 tsp salt

2 ¼ tsp (1 packet) instant yeast

For the Topping

2–3 tbsp olive oil

Fresh rosemary sprigs

A handful of mixed olives (green & black)

6–8 cherry tomatoes (optional, for decoration)

1 tbsp fresh thyme or oregano

Flaky sea salt

👩‍🍳 Instructions

1. Make the dough

1. In a bowl, mix warm water, sugar, and yeast. Let sit 5 minutes.

2. Add flour, salt, and olive oil.

3. Mix and knead (by hand 5 minutes) until soft and smooth.

4. Cover and let rise 1 hour until doubled.

2. Shape into a wreath

1. Line a baking tray with parchment paper.

2. Place dough on it and gently press into a large ring or donut shap.

3. Use your fingers to make signature focaccia dimples.

4. Brush generously with olive oil.

3. Decorate

Press toppings gently into the dough:

  • Rosemary sprigs arrangd like “greenery”
  • Olives arranged like little ornaments
  • Cherry tomatoes as “berries”
  • Sprinkle thyme/oregano
  • Finish with flaky sea salt

4. Bake

Preheat oven to 220°C (425°F).

Bake 22–25 minutes, until golden and aromatic.

5. Serve

Let cool for 10 minutes, then drizzle with a little extra olive oil.
