Mediterranean Courgette Lemon Orzo

Ingredients
1 cup orzo pasta
2 tbsp extra virgin olive oil
1 medium courgette (zucchini), halved lengthwise and sliced into half-moons
1 clove garlic, minced
Zest and juice of 1 lemon
¼ cup crumbled feta cheese (optional but recommended)
2 tbsp chopped fresh parsley or basil
Salt and black pepper, to taste
¼ tsp dried oregano or thyme
Optional: 2 tbsp toasted pine nuts or almonds for crunch
Instructions
1. Cook the Orzo
1. Bring a pot of salted water to a boil.
2. Add orzo and cook according to package instructions until al dente (usually 8–10 minutes).
3. Drain and drizzle with 1 tsp olive oil to prevent sticking. Set aside.
2. Sauté the Courgette
1. Heat 1 tbsp olive oil in a large pan over medium heat.
2. Add sliced courgette and cook for 5–6 minutes, stirring occasionally, until lightly golden and tender.
3. Add minced garlic and dried oregano or thyme. Sauté for 30 seconds until fragrant.
3. Combine and Season
1. Add the cooked orzo to the pan with courgette.
2. Stir in lemon zest, lemon juice, and remaining olive oil.
3. Toss well until everything is evenly coated and glossy.
4. Season with salt and black pepper to taste.
4. Finish and Serve
Remove from heat and stir in fresh parsley or basil.
Top with crumbled feta and toasted nuts (if using).
Serve warm or at room temperature — both are delicious!
Notes & Tips
For added protein, mix in chickpeas or grilled chicken.
Add baby spinach or roasted cherry tomatoes for more color and nutrients.
Use whole-wheat orzo for extra fiber and a nuttier flavor.
