Mediterranean Grilled Salmon with Lemon Couscous & Spinach Salad

🛒 Ingredients 

Salmon

2–3 salmon fillets

2 tbsp olive oil

Zest of ½ lemon

1 tbsp lemon juice

Salt & black pepper

Lemon Couscous

1 cup couscous

1 cup hot vegetable stock or water

1 tbsp olive oil

Zest of ½ lemon

Salt, to taste

Spinach Salad

2 cups fresh baby spinach

1 tbsp olive oil

1 tbsp lemon juice

Pinch of salt

👩‍🍳 Instructions

1. Marinate the Salmon

Rub salmon with olive oil, lemon zest, lemon juice, salt, and pepper.

Rest 10 minutes.

2. Cook Couscous

Place couscous in a bowl, pour over hot stock.

Cover 5 minutes, then fluff.

Stir in olive oil, lemon zest, and salt.

3. Grill the Salmon

Grill pan or skillet on medium heat.

Cook salmon 4–5 minutes per side until flaky.

4. Prepare Spinach Salad

Toss spinach with olive oil, lemon juice, and salt.

5. Serve

Plate couscous, top with salmon, and serve spinach salad on the side.

Add cucumber or cherry tomatoes to the spinach salad.

Sprinkle toasted almonds or pine nuts for crunch.

Works great with grilled zucchini or asparagus.
