🛒 Ingredients
Dough
2 cups all-purpose flour
1 tsp salt
1 tsp baking powder
¾ cup plain Greek yogurt (adds protein)
1–2 tbsp olive oil
2–3 tbsp water (if needed)
Filling
1½ cups fresh spinach, finely chopped
1 cup feta cheese, crumbled
½ cup Greek yogurt or cottage cheese (for extra protein)
1 tbsp olive oil
1 tbsp fresh dill or parsley, chopped
½ tsp black pepper
Salt to taste (feta is salty, so go light)
👩🍳 Instructions
1️⃣ Make the Dough
In a bowl, mix flour, salt, and baking powder.
Add Greek yogurt and olive oil.
Knead into a soft, smooth dough (add water only if needed).
Cover and rest for 10 minutes.
2️⃣ Prepare the Filling
In a bowl, mix spinach, feta, Greek yogurt (or cottage cheese), olive oil, herbs, and pepper.
Taste and adjust salt lightly.
3️⃣ Shape the Flatbreads
Divide dough into 6 equal balls.
Roll each ball into a small circle.
Place 2 tbsp filling in the center.
Fold edges over filling and seal.
Gently flatten into a thick disc.
4️⃣ Cook
Heat a non-stick pan over medium heat.
Lightly brush with olive oil.
Cook each flatbread 2–3 minutes per side until golden and cooked through.
