Ingredients
4 large flour tortillas (or whole wheat)
2 cups fresh spinach, chopped
1 medium red onion, thinly sliced
1 tbsp olive oil
½ cup crumbled feta cheese
½ cup shredded mozzarella (optional, for extra meltiness)
1 tsp dried oregano
Salt & black pepper, to taste
1 tsp olive oil (for grilling)
For Yogurt Dip (optional):
½ cup Greek yogurt
1 tbsp lemon juice
1 tbsp fresh dill or mint, chopped

Instructions
1. Cook the Onions:
Heat 1 tbsp olive oil in a skillet over medium heat.
Add red onion, cook 5–7 minutes until soft and lightly caramelized.
2. Wilt the Spinach:
Add chopped spinach to the skillet with onions.
Cook 2–3 minutes until just wilted. Season with salt, pepper, and oregano. Remove from heat.
3. Assemble Quesadillas:
Lay one tortilla flat.
Spread a portion of spinach-onion mixture on half of it.
Sprinkle feta and mozzarella (if using) on top.
Fold tortilla in half to enclose filling. Repeat with remaining tortillas.
4. Cook the Quesadillas:
Heat a skillet with a little olive oil.
Cook quesadillas 2–3 minutes per side until golden brown and crisp.
Press gently with a spatula so the cheese melts evenly.
5. Serve:
Slice into wedges.
Serve warm with yogurt dip on the side.
