Mediterranean Roasted Artichoke with Feta, Sun-Dried Tomatoes & Green Herb Sauce

Tender roasted artichoke hearts baked until golden, topped with creamy feta, tangy sun-dried tomatoes, and a bright, herby Mediterranean green sauce. It’s simple, wholesome, and packed with flavor.

Ingredients

For the Roasted Artichoke

1 can/jar artichoke hearts, drained and halved (or 2 whole cooked artichokes)

1.5 tbsp olive oil

Salt & black pepper to taste

¼ tsp garlic powder

¼ tsp dried oregano

4–5 sun-dried tomatoes, sliced

2–3 tbsp crumbled feta cheese

For the Mediterranean Green Sauce

¼ cup fresh parsley

¼ cup fresh basil or cilantro

1 garlic clove

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp water (to thin as needed)

Salt & pepper to taste

Instructions

1. Roast the Artichoke

1. Preheat oven to 200°C (400°F).

2. Toss artichoke hearts with olive oil, garlic powder, oregano, salt, and pepper.

3. Spread on a baking tray and roast 18–20 minutes, until edges are lightly golden.

2. Make the Green Herb Sauce

1. Add parsley, basil, garlic, lemon juice, olive oil, water, salt, and pepper to a blender.

2. Blend until smooth and drizzle-able.

3. Add more water for a thinner sauce if needed.

3. Assemble

1. Place the roasted artichokes on a serving plate.

2. Sprinkle sliced sun-dried tomatoes over them.

3. Add crumbled feta.

4. Drizzle generously with the green herb sauce.
