Ingredients
(Serves 4-6)
For the Chicken:
2 boneless, skinless chicken breasts, diced (about 1 lb)
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon Italian seasoning
1 tablespoon olive oil
For the Pasta:
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 cups low-sodium chicken broth
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes (optional)
2 cups uncooked penne or rotini pasta
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
For the Cheese:
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
¼ cup chopped fresh basil (or 1 teaspoon dried basil)

Instructions
1. Cook the Chicken:
1. Heat olive oil in a large pot over medium heat.
2. Add diced chicken, salt, pepper, garlic powder, and Italian seasoning.
3. Cook for 5-7 minutes, stirring occasionally, until chicken is browned (it doesn’t need to be fully cooked yet).
4. Remove chicken from the pot and set aside.

1. In the same pot, add garlic and saute for 30 seconds.
2. Pour in crushed tomatoes, chicken broth, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Stir to combine.
3. Add uncooked pasta and return the chicken to the pot.
4. Bring to a gentle boil, then reduce heat to a low simmer. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
3. Add the Cheese:
1. Stir in Parmesan cheese and half of the mozzarella.
2. Sprinkle the remaining mozzarella on top. Cover for 2-3 minutes until cheese melts.
4. Serve & Garnish:
1. Remove from heat and stir in fresh basil.
2. Serve warm, garnished with extra Parmesan and basil if desired.
