INGREDIENTS Quick n Easy Parmesan Potato Coins 
  • 6 russet potatoes peeled and sliced into ⅓-inch rounds
  • ¼ cup olive oil
  • ½ tablespoon Italian Seasoning Mix
  • 1 oz Parmesan cheese (shredded) (¼ cup)
INSTRUCTIONS Quick n Easy Parmesan Potato Coins :
  1. Preheat the oven to 400 degrees.
  2. Line a sheet pan with parchment paper.
  3. Lay out the potato coins on the prepared baking sheet.
  4. Drizzle with the olive oil and season with the herbed seasoning mix. Toss to coat.
  5. Bake for 25 minutes and flip the potatoes with a spatula or cooking tongs.
  6. Cook another 15 minutes, or until the potatoes are golden brown and cooked through.
  7. Remove from the oven and sprinkle with parmesan cheese. Serve hot or warm.

Leftovers can be stored for 4 days in an airtight container in the fridge, but you may want to crisp them up again in the oven.
