Ingredients

Roasted Vegetables

1 cup cauliflower florets

1 cup carrots, sliced

1 zucchini, sliced

1 red bell pepper, sliced

1 small red onion, wedges

2 tbsp olive oil

½ tsp smoked paprika

½ tsp cumin

Salt & black pepper

Hummus Base

1½ cups classic hummus (store-bought or homemade)

1 tbsp olive oil

1 tbsp lemon juice

Fresh Toppings

Cherry tomatoes, halved

Cucumber slices

Instructions

Swirl with olive oil and lemon juice

Spoon warm roasted veggies over hummus
