For the chicken & marinade:

1 whole chicken (about 3–4 lbs), cut into pieces or 4 bone-in chicken thighs + 4 drumsticks

3 tbsp olive oil

Juice + zest of 1 lemon

4 cloves garlic, minced

1 tbsp fresh rosemary, chopped (or 1 tsp dried)

1 tbsp fresh thyme, chopped (or 1 tsp dried)

1 tsp dried oregano

Salt & black pepper, to taste

For the potatoes:

1 ½ lbs baby potatoes, halved

2 tbsp olive oil

1 tsp dried oregano

½ tsp paprika

Salt & pepper, to taste

Optional finishing:

Fresh parsley, chopped

Extra lemon wedges

Instructions

Preheat oven: 200°C / 400°F.

Marinate chicken: In a bowl, whisk olive oil, lemon juice/zest, garlic, rosemary, thyme, oregano, salt, and pepper. Coat chicken pieces thoroughly and let marinate at least 20 minutes (or overnight in the fridge).

Prepare potatoes: Toss halved baby potatoes with olive oil, oregano, paprika, salt, and pepper. Spread on a large roasting pan.

Assemble: Place chicken on top of the potatoes, skin side up. Pour any extra marinade over everything.

Roast: Bake 55–65 minutes, until chicken is golden and cooked through (internal temp 74°C / 165°F) and potatoes are tender. Stir potatoes halfway for even browning.

Finish: Garnish with fresh parsley and serve with lemon wedges.
