Savory Chicken Udon Stir Fry with Vegetables

Ingredients

For the Stir Fry

  • 2 boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon Olive  oil
  • 2 packs (7-8 oz each) fresh udon noodles
  • 1 tablespoon sesame oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced

For the Sauce

  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon of chili garlic sauce (optional for added spice)

Guidelines
Marinate the Chicken: Place the thinly sliced chicken in a medium-sized bowl and mix with 1 tablespoon cornstarch and 2 teaspoons soy sauce. Once the chicken is uniformly coated, mix well and leave away to marinate for at least ten minutes.
Get the sauce ready: 1/4 cup soy sauce, 2 teaspoons oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon rice vinegar, 1 tablespoon honey or brown sugar, and 1 teaspoon chili garlic sauce (if used) should all be combined in a small dish. Put aside.
Boil a kettle of water to cook the udon noodles. In accordance with the directions on the box, cook the fresh udon noodles for one to two minutes, or until they are just soft. To keep from sticking, drizzle with a little amount of sesame oil and leave aside.
Stir-Fry the Chicken: Heat one tablespoon of vegetable oil in a big pan or wok over medium-high heat. Stir-fry the marinated chicken for 4–5 minutes, or until it’s cooked through and has a hint of golden color.

Add the sesame oil to the same pan and sauté the vegetables. Add the broccoli florets, julienned carrot, red bell pepper, and onion slices. Vegetables should be sautéed for three to four minutes to become soft but still have a tiny crunch. After that, add the minced garlic and ginger and simmer for a further one to two minutes, or until fragrant.
Combine Noodles and Chicken: Put the cooked chicken and udon noodles into the pan. Cover the noodles and veggies with the prepared sauce. Using tongs or a spatula, combine everything, making sure the noodles and veggies are well covered with sauce.

To finish and serve, stir-fry for a further two to three minutes, or until all the ingredients are well cooked and the sauce has thickened somewhat. If needed, adjust the seasoning by tasting it.
