This bowl is inspired by Sicilian cucina povera, featuring roasted cauliflower with turmeric, golden raisins, capers, and toasted almonds, served over farro or quinoa and finished with lemon, olive oil, and fresh herbs. It’s simple, aromatic, and deeply Mediterranean.

Ingredients

Roasted Cauliflower

1 medium cauliflower, cut into florets

1 tbsp extra-virgin olive oil

1 tsp ground turmeric

½ tsp smoked paprika

Salt & black pepper

Bowl Base

1 cup cooked farro or quinoa

¼ cup golden raisins (soaked 5 min, drained)

1 tbsp capers, rinsed

2 tbsp toasted almonds or pine nuts

2 tbsp fresh parsley or mint, chopped

Lemon Dressing

Juice of ½ lemon

1 tsp lemon zest

1 tsp olive oil

Pinch salt

Instructions

1️⃣ Roast Cauliflower

Preheat oven to 200°C (400°F)

Toss cauliflower with olive oil, turmeric, paprika, salt & pepper

Roast 22–25 minutes, flipping halfway, until golden and tender

2️⃣ Prepare Base

Warm farro or quinoa

Toss with raisins and capers

3️⃣ Assemble Bowl

Add roasted cauliflower to grain base

Sprinkle almonds and herbs

4️⃣ Finish

Drizzle with lemon dressing

Toss gently and serve warm or room temperature

Use saffron instead of turmeric for luxury Sicilian flavor

Finish with a pinch of red pepper flakes if you like heat
