Instructions
1. Preheat Oven
Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients
In a bowl, combine oats, oat flour, baking powder, cinnamon, pumpkin spice, and salt.
3. Mix Wet Ingredients
In another bowl, whisk pumpkin puree, maple syrup (or honey), egg, oil, and vanilla until smooth.
