Snicker doodle Muffins Recipe 

In the form of muffins, soft and supple Snicker doodles with a cinnamon sugar topping are my absolute favorite cookie!

Ingredients

  1. One large egg,
  2. one and a half teaspoons of vanilla extract,
  3. 1/2 cup softened unsalted butter,
  4. 1/3 cup granulated sugar,
  5. 1/2 cup milk,
  6. 1/4 cup plain Greek yogurt or sour cream,
  7. and 1 and a third cups all-purpose flour
  8. 1/4 teaspoon baking soda,
  9. 1/2 teaspoon crushed cinnamon,
  10. 1/2 teaspoon baking powder,
  11. and 1/2 teaspoon salt

Topping:

  1. ½ cup granulated sugar
  2. 2 teaspoons powdered cinnamon 3
  3. Tablespoons melted butter

Procedure

  • Start the oven at 375 degrees Fahrenheit. Generously coat a normal muffin pan with non-stick cooking spray. Put aside.
  • In a large mixing basin or stand mixer bowl, add the butter and granulated sugar.
  • Blend until completely blended and smooth, about 2 minutes.
  • Put the egg in. Blend together the Greek yogurt, milk, and vanilla.
  • Using a rubber spatula, stir in the flour, baking soda, baking powder, cinnamon, and salt until just incorporated. Avoid overmixing.
  • Fill each prepared muffin tin about two thirds of the way to the top with batter.
  • Bake in preheated oven for about 15-20 minutes or until a toothpick inserted in the center comes out clean (or with just a few moist crumbs).
  • Let cool for a minute or two inside the muffin tray, then transfer to a wire cooling rack.
  • Melt the butter for the topping while the muffins are baking.
  • In a different small container, combine the cinnamon and granulated sugar.
  • After the muffins are taken out of the oven and allowed to cool for a few minutes, lightly coat each muffin with melted butter using a pastry brush.
  • Apply a liberal amount of the cinnamon-sugar mixture. (Alternatively, you could dip the muffin tops in the melted butter and then the sugar, but I think using a pastry brush and then dusting them with sugar makes them appear better.)
