Ingredients

1 wheel queso de cabra (goat cheese) or queso manchego (~8 oz)

1/4 cup crushed tomatoes or roasted red peppers, chopped

1 tbsp honey (optional, for balance)

1 tbsp chopped fresh parsley

Crusty baguette slices or pita bread

Crackers or grissini

Sliced chorizo (optional)

Instructions

1. Preheat Oven:

Set oven to 375°F (190°C).

Lightly grease a small oven proof dish.

2. Prepare the Cheese:

If using a soft cheese (queso de cabra), place it whole in the dish.

If using a firmer cheese (queso manchego), slice into thick pieces and arrange in the dish.

3. Make the Topping:

In a small pan, heat olive oil over medium heat.

Add garlic, stirring until fragrant (about 30 seconds).

Stir in crushed tomatoes, smoked paprika, and red pepper flakes. Simmer for 2 minutes.

Pour this mixture over the cheese in the baking dish.

4. Bake the Cheese:

Bake for 12-15 minutes, or until cheese is bubbling and slightly golden.

If you want a crispier top, broil for 1-2 minutes at the end.
